Chocolate! Chocolate! Chocolate! I love love love them.
I wouldn’t even mind to have ‘Chocolate’ as my middle name. Chocolate and romance go hand in hand. Also the color red. Nod your head, if you agree?
It’s Valentine’s Day week, so advanced wishes for VALENTINE’S DAY people!!! I see cupid dancing and his arrows flying from one heart to another.There is love in the air and I could visualize tons of red heart balloons raising against the fluffy blue February sky.
The tempting advertisements convinces everyone that this day is so very special and makes me wonder what each of us are planning for our significant other. I am guessing that a silent candle-light dinner, gifting jewelary and roses are there in everyone’s list. This year it is right on a weekday and I don’t think we still have a plan in place. May be I will cook a nice dinner that my family loves.
To celebrate and toast the love in our life, this weekend I decided to make some quick and easy desserts with chocolate. We are so busy with our day-to-day routine that having time to make elborate dessert is not possible. I love desserts that are mix , set and done. I made two chocolate based dessert for my Valentine. One is healthy truffles with dates, prunes, figs and nuts. I call this energy balls as they are pumped with all the good stuffs. There is no added sugar which makes it so wonderful for people who are avoiding white sugar. This truffle is my go-to post workout snack. There are loaded with good calories and I love the nutty texture it comes from roasted walnuts, almonds, cashwes and pistachios. I dipped them in melted dark chocolate and coated it with crushed nuts. It looked fancy to me as I am used to eating just the dates-prune-figs rolled in to boring ball. The second dessert which I made is my son’s favourite. It’s nothing but simple fudgy chocolate bark topped with roasted nuts. I made a whole batch of roasted nuts and used them to make both the desserts. This has been our post-dinner snack for the last two days. It’s made with dark chocolate and almost no added extra sugar, I am in love with it.

You really don’t need a recipe for this. Just dump whatever you have in hand and pulse it in a food processor with little ghee or melted butter. Mix in little unsweetened cocoa powder and roasted nuts. You can use dried cranberries, raisins, dried apricots. Anything natural ad sweet works great. I used Scharfen Berger Dark Chocolate to coat it. Voila, the most delicious and healthy dessert is ready to toast and celebrate Valentine’s day all week long.

DATES, PRUNES AND FIG TRUFFLES WITH DARK CHOCOLATE AND NUTS
Makes: 10 small balls
12- 15 dates
2 tablespoon melted butter or ghee
1-2 tablespoon water
1/4 cup roasted almonds, cashews, walnuts and pistachios (crushed) + more to coat the truffles
1/4 cup unsweetened cocoa powder (start with 1 tablespoon and use as needed)
1 bar of any good quality dark chocolate or you can use semi-sweet chocolate chips too
Pulse the figs, prunes and dates in a food processor. Add ghee or melted butter and little water to bring them together. Transfer to a fresh bowel. Using hand, mix the cocoa powder and nuts. Roll them into a dough.
Pinch little and roll into a smal ball.
Melt the chocolate in microwave. You can start by microwaving at high for 1 minute. Mix in until they are melted.
Dip the rolled balls into the melted chocolate. Then roll it over the crushed, roasted nuts. Place them on a baking stray covered with parchment paper. Chill in the refridgerator until they are set, about 30 minutes.
