30 seconds Microwave Eggless Chocolate Cake| Holiday Gifts

The house is so quiet when Katli is away. A soothing quietness which Kulfi loves. She gets all the sleep she can when her big brother is away screaming and playing at school. He returns home at 6 PM. The time when everything at home turns topsy turvy. I will place her in the bouncer after a feed. The moment he enters the house he would pace towards her screaming “Anna (big brother)  is here! Anna is here!!”. She would watch him in total shock with her mouth wide open. Scared and confused she would stay motionless. He will kiss her on the forehead with all the love. As a mother, I enjoy watching him do that. He will greet her and run to the bathroom to wash his hands. This is his everyday after school ritual. Yesterday after finishing his milk, he sat next to her with a huge book that had pictures of cars. He placed the book on her face and she screamed in pain. I stayed calm and asked him what he was doing. He explained with his broken sentences that he is teaching her how to read. Just to distract him from handling heavy books, I asked him to explain Christmas to her. He said ” It’s the time when Santa comes and gives gift. That’s it. Okay” He completed. Period. Then he said that we get to eat lots of chocolates. Pause. We eat the ones left from Halloween he completed. I laughed. His eyebrows narrowed and with his arms placed on his hip, he warned me that its not funny. That’s what he says when we laugh at him. I apologized and stayed quiet.

Katli had Christmas celebration at school today and this year they are having PJ party. He went to school all excited to receive gifts from Santa. To me, it’s the time of the year where we spend time with family; a time to relax, slow down, cherish and make memories with our loved ones. We have invited my husband’s cousin and his family for dinner on Saturday. I was craving for hot sizzling brownie served with dollops of vanilla ice cream. Like the ones I have eaten at Never Trust A Skinny Chef Restaurant in Chennai. I don’t have the time to do elaborate baking. I remember a super quick recipe for microwave chocolate cake. I had noted the recipe in my dairy. This is going to one of the dessert for Saturday’s dinner. Just quick, simple and uber delicious. My guests are going to love it.


Also, I have made this cake mix in tiny jars and that’s going to my holiday gift to all my friends. Let the chocolate party begin. I am reminded of this conversation with my achi (grandmother)

Me: “What do you want when I come back to see you?”
Achi: “Something sweet, something with chocolate”
Me: “Achi, you’re diabetic, you have high BP.”
Achi: “I’m old, kutti-ma. I am going to die soon. So might as well enjoy what I like” .

This is the women who ate what she loved until her last breath. We lost her to God this year and this post is for her. A women whom I love so much!

Makes: 1 Super Happy Soul


  • 1 tablespoon flour
  • 1 tablespoon white or brown sugar
  • 1 tablespoon cocoa powder
  • 1 tablespoon water
  • 1 tablespoon vegetable oil
  • Pinch of salt
  • Pinch of baking soda
  • Vanilla Ice-cream (A must)


  1. Whisk them all together and transfer to a ramekin. Microwave for 30 seconds. Serve hot with dollops of vanilla ice cream.

  1. Such a sweet post Vijji and Sid’s story makes me laugh and laugh all the time. I could almost visualize Kulfi’s reaction LOL LOL! Life has it’s rides, and it’s sweet moments such as these that keeps us going 🙂 I am so going to try your chocolate cake. 30 secs!! Mine takes 3 minutes in microwave, but then I add egg, may be that’s way.
