Hi guys & girls!
Happy friendship’s day to you all.Sphagetti, pasta, penne, lasagna, cheese – I am sure you guys have guessed the place of origin by now. Yes they are all synonymous to ITALY. Who doesnt like yummy Italian food and who doesnt like all the cheeses from there? I am a great fan of Giada, a chef/host of Everyday Italian. This recipe is inspired from her with little modifications to suit my palate.

” Whats for dinner today?” The usual question S asks the moment he enters home.

“Penne with pesto”. I said with a very big smile and energetic tone. I was so excited about the dish. Last time, I made sphagetti with parmesan cheese , shallots and added a dash of dried thyme, basil and parsley. Though S is an ardent Italian food lover, he wasnt really impressed with its taste.

So today when I said penne, he frowned a bit. May be he thinks I cannt fix a decent a Italian meal . 🙁 🙁 🙁

Dinner time:
I decided to serve only a little to him as he wasn’t really excited about it. I served warmed Penne in a bowl and added grated cheese over it. S loved it so much that he ended up eating almost the entire food hardly leaving anything for tomorrow. Lol!

The lovely flavors of sun dried tomato blends beautifully with the basil , garlic and onions. It was a splendid Italian experience from our dinner table. Trust me, this recipe will be a great hit. Do give it a try.

The post for today is cheesy delicious penne cooked with sun dried tomato pesto and simple veggies.

Sundried tomato pesto
1 tbs tomato puree
3-4 sun dried tomato
1-2 tsp basil
1 tbs onions
5 garlic cloves
1/2 tbs red bell peppers
1tbs parmesan cheese
1 tbs olive oil
2 tsp red wine vinegar
1 tsp sugar
1/2- 1 cup water (use accordingly)
Salt to taste

For the penne
1 tbs olive oil

Other Ingredients
1 cup finely chopped scallions
1 cup chopped red bell peppers
5-6 chopped sun dried tomato
3-4 finely chopped garlic

Cook the penne according to manufacturer’s instructions. Generally it takes 10-12 min to cook. Cook them in a large cooking vessel with good amount of salt. Retain the water for future use.

Grind the ingredients for pesto to a course thick paste. Set them aside.

Heat olive oil in a wok. Once heated up, add the garlic and let them cook for couple of min.

Add the scallions, red bell peppers, sun dried tomato to the tempered oil and cook for another 3-5 min.

Throw in the pesto mixture and give it a complete stir. Pour about 1 cup penne water and let them cook on medium flame for couple of minutes. Once they begin to thicken up, add the penne and give it a complete toss.

Grate parmesan cheese on the top and serve.
