1 Pasta Sauce = 4 Dishes For Today

There are lot of things in our kitchen that needs to completed before it expires. For instance, avocado. We need to use it before it turns black and spoils. If you are the one like me, who will stare at that one precious avocado in the store thinking how to use then this post will help you.  I have shared recipe for 2 dishes that can be made when you cut open one avocado. In the same line, I am going to be sharing two easy recipes with pasta sauce. Sometimes I end up buying 2 bottles of Preggo Tomato Pasta Sauce from Costco and have come up with more than 10 ways to use it. Once I open a bottle, I give myself 3-4 days to finish it.  It’s 10.30 PM now and I am rushing to publish this post as I want to include this meal for our Week 2 Menu Chart.  That reminds me to ask whether you all loved using the Week 1 Menu Chart I created last week. My four year boy loves pasta and my husband loves it too. I try to avoid carbs on some days. This recipe was made on one such day where I developed hate-hate relationship with carbs. On such days, I make zuchini noodles and add it to the common pasta sauce I make. My boys need meat in their meal and I don’t have time to make meat balls. Even though I buy store bought tomato sauce, I don’t directly add to paste.  I cook it with vegetables and then use it. This recipe is a semi-homemade as it involves little bit of cooking here and there but trust me this recipes will come handy on a week night.

SEMI HOMEMADE DINNER IDEA

How to make pasta sauce with vegetables?

Ingredients

  • 1 teaspoon olive oil
  • 1 garlic, minced
  • 1 small onions, chopped
  • 1 carrot, cubed
  • 15 button mushroom, sliced
  • 1 zucchini, cubed
  • 10 broccoli florets, chopped
  • 2 cups Preggo Pasta Sauce
  • 1/2 cup water
  • 1/2 teaspoon peppercorns, crushed

Cooking Directions

  1. Heat oil in the saucepan. Once hot, add garlic and onions. Saute for couple of minutes.
  2. Now add carrots, mushrooms. broccoli and zucchini. Let it cook for 8 minutes. Pour the tomato sauce and water. Bring it to a rolling boil, it takes about 10 minutes on medium flame. Add crushed pepper corns. Stir and set aside.

How to Assemble Pasta for Carb Lovers?

Ingredients

  • 1 cup whole wheat macaroni pasta
  • 1 cup Parmesan Cheese
  • Meatballs, cooked as per manufacturer’s instructions
  • Pasta Sauce as per requirement

Cooking Directions

  1. In a pressure cooker, add 1 cup raw pasta and fill 6 cups water. Cook for 1 whistle. Let the pressure settle down. Remove and run through colander and then rinse through running tap water. Spread over a baking tray. Set aside.
  2. Add the cooked pasta to hot tomato sauce. Sprinkle paramesan cheese and top with cooked meat balls. Serve hot.

How to Assemble Pasta for No-Carb Lovers?

Ingredients

  • 2 zuchinis, made into spirals (refer amazon link for the product above)
  • 1 cup Parmesan Cheese
  • Meatballs, cooked as per manufacturer’s instructions
  • Pasta Sauce as per requirement

Cooking Directions

  1. Add the zucchini spirals to a saucepan and pour the prepared pasta sauce. Cover and let it cook for 8 minutes on low flame. Remove and mix cheese.
  2. Serve hot with meat balls.

Notes:

  1. Zuchhini noodles is an ideal South Beach Diet Phase 1 meal.
  2. This no-carb meal can also be eaten by those who have gestational diabetes (but add a small slice of bread to maintain the carb intake for the meal. Don’t skip carbs during pregnancy as the baby needs it for their brain development)
  3. This meal is also perfect for those who wants to lose weight and those who are diabetic/ pre-diabetic.

BREAD PIZZA

Ingredients

  • Slices of bread
  • Pasta Sauce as per liking
  • 10 Olives
  • 10 Baby Spinach Leaves
  • 3-5 Mushrooms, Sliced
  • 1 Babybel Cheese

Cooking Direction

  1. Smear tomato sauce over the bread. Top it with olives, mushrooms and baby spinach. Toast in an OTG oven for 5-8 minutes or until it turns crunchy. You can also broil them in a conventional oven at 350F for 10-12 minutes or until crunchy. Serve hot with a glass of milk or orange juice.

ISRAELI EGG DISH – SHAKSHOUKA

Makes for 1

Ingredients

  • 1 teaspoon olive oil
  • Handful Baby Spinach
  • 10 Mushrooms, sliced
  • 5 Broccoli Florets, chopped
  • 1/2 cup Pasta Sauce
  • 1/2 cup Water
  • 2 Eggs
  • Salt and Pepper to taste
  • 1 Babybel Cheese

Cooking Directions

  1. Heat oil in a saucepan. Add the vegetables and saute for 5-8 minutes until they are cooked crunchy.
  2. Now pour the tomato sauce and water and bring it to a rolling boil. Break the eggs slowly over the sauce and cook covered for 10 minutes or until set.
  3. Sprinkle salt and pepper. Serve hot. Pinch little chunks of babybel cheese and garnish on top. The heat from the dish will melt it. If you crave for carb, then eat with toast.
