Cook the penne according to manufacturer’s instructions. Generally it takes 10-12 min to cook. Cook them in a large cooking vessel with good amount of salt. Retain the water for future use.
Grind the ingredients for pesto to a course thick paste. Set them aside.
Heat olive oil in a wok. Once heated up, add the garlic and let them cook for couple of min.
Add the scallions, red bell peppers, sun dried tomato to the tempered oil and cook for another 3-5 min.
Throw in the pesto mixture and give it a complete stir. Pour about 1 cup penne water and let them cook on medium flame for couple of minutes. Once they begin to thicken up, add the penne and give it a complete toss.
Grate parmesan cheese on the top and serve.
